Lamb Shish Story:

Lamb Shish is usually made with the leanest part of the lamb, we use Lamb Backstraps exclusively for our Lamb Shish that we supply to our clients. As with everything else Backstraps -also known as Lamb Trim Eye Loin- are delivered fresh daily to our factory in Sydney, then our experienced butchers trim off excess fat and take the skin off, leaving behind what can only be described the as the leanest and the softest part of lamb, then it is carefully diced into bite sized chunks against the grain of the meat to ensure consumer satisfaction. When it is delivered to shops around Sydney in our refrigerated vehicles, our customers use their several delicious different variety of spices to marinate them for an hour or more, then it is cooked to order and decorated with fresh salads and rice, sometimes with chips on plate or rolled in special Turkish lavash bread for a taste sensation that is also good for you.
